Welcome to Indio, the latest installment of Latin Fusion Cuisine from Chef Hector Ruiz.
Indio’s food is inspired by Hector’s Mexican origins. Hector begins with hand crafted tortillas made fresh to order. Next he purchases locally sourced specialty meats to create Mexican and other Latin style flavors that will have you coming back for more. From northern and central Mexico we present - Carne Asada, Mayan style pork, cochinita pibil, barbacoa de res , baja style, fish tacos, adobo marinated tacos , sinaloa style ceviche, and Guaraches. From the Gulf of Mexico we have arroz a la tumbada, a traditional rice and seafood dish. And finally, off the coast of Mexico we take you to the islands and bring you dishes like arroz con pollo, pollo jamaiqueno, Jamaican style fried chicken and casarola de mariscos. Indio is waiting for you.
